Let me begin by saying I am not a very big cake fan. I am more of a brownie type of person. BUT this cake is different. It is so moist and chocolatey that I cannot resist it! AND it’s easy!! Only one bowl necessary, and it all comes together in less than half an hour (+ baking time of course)!
I’ve made it lots of times, for birthdays, parties, events, and just for fun. Sometimes with oreos, sometimes with chocolate frosting, or vanilla, or peanut butter, sometimes as cupcakes, sometimes as a rectangle, and sometimes as a two-layer round cake. However you make it, you are sure to enjoy!
Recipes below!! This is a great, reliable, go-to chocolate cake!
Moist & Delicious Chocolate Cake
Ingredients:
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
1-2 cups crushed oreos, or other chocolate sandwich cookies (if you want these in your cake!)
2 eggs, slightly beaten
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla
1 cup boiling water
Directions:
Preheat oven to 350 degrees. Grease a 13 x 9 inch pan, or 2 8-inch round pans, or 2 dozen cupcake molds.
Whisk together all of the dry ingredients. Then, add in the eggs, milk, oil, and vanilla. Stir gently until there are no more streaks of flour. Add in the boiling water and stir/fold in until the batter all looks the same. It will be very thin. Pour into prepared pan(s). Bake for cakes for 30-35 minutes, or cupcakes for 18-22 minutes.
If you’re making a 13 x 9 inch cake, cool completely in the pan. If you’re making 8 inch round cakes or cupcakes, remove from pan after about 10 minutes and cool completely on a cooling rack.
Then, Frost!
Chocolate Frosting:
Ingredients:
1 stick melted butter
2/3 cup unsweetened cocoa powder
3 cups powdered sugar, sifted
1/3 cup milk
1 tsp vanilla
Directions:
Stir cocoa and melted butter together. Alternately add the sifted powdered sugar and milk, beating until spreading consistency. Add in the vanilla. Frost away!

Vanilla Frosting:
Ingredients:
3 cups powdered sugar, sifted
1 cup butter, softened
1 tsp vanilla
1-2 tsp milk
Directions:
Beat the butter until fluffy. Slowly add in the powdered sugar. Add in the milk and vanilla. Beat until spreading consistency, adding additional milk if necessary. Add in Oreos if you want to make it cookies ‘n’ cream!

Peanut Butter Frosting:
Ingredients:
12 ounces (1 1/2 sticks) butter, softened
2 cups peanut butter
1 cup powdered sugar (sifted)
1 tsp salt
1 tsp vanilla
1 cup milk
Directions:
Beat butter and peanut butter in a bowl until creamy. Alternatively add in the milk and powdered sugar. Add in the salt and vanilla.
^^Even put peanut butter cups on top!^^
Combine different frostings on the same cake if you want! Like this:
