Peanut butter & chocolate?
You’ve probably noticed that I am OBSESSED with these two foods together. Definitely my favorite.
I’ve made the base of this recipe in cookie-form and bar-form before. I decided to make it into bars this time because I was pressed for time! When I do cookies, it takes multiple batches and takes a decent amount of time more than just pressing all of the dough into the pan, popping it into the oven, and being done! It’s a win-win, because they still have the same amazing taste!
They are made with almost 2 cups of peanut butter and all oats (no flour). Certainly not a health-food, but these aspects do increase the nutritional value a bit when compared to your average cookie! More protein, whole grains, and fiber.

Oatmeal Peanut Butter Bars with Chocolate Chips and Peanut Butter M&Ms!
1 stick butter
1 3/4 cup peanut butter (I always like creamy, but you could use crunchy too!)
1 1/4 brown sugar
1 cup granulated sugar
1/2 tsp salt
2 tsp baking soda
1/2 tsp vanilla
4 1/2 cups oatmeal (quick or old fashioned)
2 cup semisweet chocolate chips
1 bag peanut butter m&ms
1. Preheat oven to 350 degrees F. Line a half-sheet jellyroll pan with foil. Spray with nonstick cooking spray. Set aside.
2. Beat the peanut butter, butter, and sugars in a large bowl until creamy. Add in the eggs, vanilla, salt, and baking soda. Beat until well combined.
3. Add in the oatmeal and chocolate. You will probably need to switch to a wooden spoon, as the batter will be thick.
4. Press dough evenly into prepared baking sheet. Bake in oven 15-25 minutes or until lightly browned. 5. Remove from the oven and cool completely on a cooling rack (OR enjoy warm & gooey)! These store well in the freezer if you want to freeze some too!
