Chocolate Oreo Cake & Cupcakes with Creamy Peanut Butter Frosting!


Everyone should get a cake on their birthday, at least that’s how I feel anyway. Thus, to celebrate my friend’s birthday, I of course decided to make him a cake!

Instead of just making the cake, I decided to double the recipe so that I could make the cake to give him + cupcakes to bring to work / give to other people. I tested out a new chocolate cake recipe which turned out great! A little more dense-because of the sour cream- than this chocolate cake that I’ve made in the past. I wouldn’t say I like one more than the other– they’re both rich, chocolaty, and super-moist! I crushed up some Oreo cookies and put them in the batter as well.

And what is the BEST pairing with chocolate? Peanut butter, of course!! Not going to lie, the peanut butter frosting I made  for the birthday cake did not turn out as I intended. The consistency was off; however, I used it anyway because, well, it tasted delicious and I was short on time!

Oh, also, I ran out of regular M&Ms for the top, so that’s why the “ED!” in “JARED!” looks a littttle bit funky (used peanut M&Ms instead of regular).

The cake was DELICIOUS! Though the frosting wasn’t frosting consistency, is was still peanut-buttery goodness. I’m not including the recipe though because it really isn’t frosting.

The next day (today), I made a new batch of frosting for the cupcakes. OH and the cupcakes aren’t just chocolate cupcakes! I took whole Oreos, split them, put the cream-side of the oreo in the bottom of the muffin cup, then the batter, then topped with the other half of Oreo! Basically making a cupcake Oreo cookies sandwich, so to speak.

I thought it would be a nice touch!

Anyway, I made new frosting that was (to me) PERFECT; I will never try to make a different peanut butter frosting again. It was creamy, peanut buttery, and smooth.

Topped with chocolate sprinkles! (or Jimmies, if you’re from New England like me :))

I made some minis too!

I ended up making 17 regular-sized cupcakes and 2 dozen minis! I’m giving some to my roommates, some to a few friends, and bringing the rest into work tomorrow!

Chocolate Oreo Cake & Cupcakes with Creamy Peanut Butter Frosting!


(NOTE: I doubled this recipe to make the cake and all the cupcakes. The recipe below should make ~1 13×9 inch cake or about 18 regular-sized cupcakes.)


2 cups sugar
1 1/2 cups flour
3/4 tsp baking soda
1/2 tsp salt
3/4 cup unsweetened cocoa powder
1/4 cup shortening
1 stick (1/2 cup) butter
1 cup boiling water
2 eggs
1 1/2 tsp vanilla
1/2 cup sour cream
1 sleeve (~15) Oreo cookies, crushed

1. Preheat oven to 350 degrees F. Line 18 muffin cups with baking liners or spray a 13×9 inch pan with cooking spray. If you want to make the Oreo-bottom cupcakes, split 18 Oreos in half and place the cream-side half into the muffin cups. Reserve the other halves. Set all aside.
2. In a medium-sized bowl, combine the flour, sugar, baking soda, and salt. Set aside.
3. In a large bowl, place the butter and the shortening. Place bowl in microwave in intervals of 30 seconds until the butter is melted. Whisk the melted butter and shortening together.
4. Whisk in the cocoa powder and the boiling water. At this point, I took the time to do some dishes, unload the dishwasher in my apartment, etc, because you want to let the butter mixture cool a bit before adding anything else.
5. After ~10 minutes, whisk in the eggs, sour cream, and vanilla. Switch to a spatula and fold the flour mixture into the batter until combined. Add in the crushed Oreos.
6. Pour into the prepared baking pan for the cake, or scoop into prepared muffins cups. For the cupcakes, top each one with the other halves of the Oreos.
7. Place in the preheated oven and bake cake for 25-30 minutes, or cupcakes for 15-20 minutes. Remove from the oven and cool completely on wire cooling rack.

1/2 cup butter
1 cup peanut butter
2 cups powdered sugar, sifted
1 tsp vanilla
3-4 tsp sour cream

1. Place the butter and peanut butter in a bowl and beat with an electric mixer until smooth. Add in the powdered sugar, vanilla, and sour cream. Beat on medium/high speed until creamy.
2. For the cake, simply spread the frosting on top and enjoy! For the cupcakes, scoop the frosting into a piping bag with a piping tip of your choosing. Pipe the frosting onto the cupcakes. Top with sprinkles!
