Like banana, honey, cinnamon, & cream cheese?? The flavors combine to create a delicious treat! I made these around Valentine’s Day! They’re slightly sweet, something special, & even a little healthier than the traditional cupcake!
As a chocoholic, it is not often that I bake anything without chocolate in it. That being said, these were really great!
Moist, lower fat banana cupcakes, frosted with smooth & creamy honey cinnamon cream cheese frosting, and topped with conversation hearts!
I brought a dozen to work, gave out some as birthday gifts, and shared the rest with friends!
Banana Cupcakes with Honey Cinnamon Cream Cheese Frosting
Makes 2 dozen cupcakes
Ingredients:
3 cups all purpose flour
1 1/2 cup granulated sugar
2 tsp baking powder
1 tsp baking soda
1/2 cup melted butter
1/2 cup unsweetened applesauce
3 cups mashed bananas (5-6)
4 large eggs
1 tsp vanilla
Directions:
1) Preheat oven to 350 degrees F. Line 2 regular muffin pans with foil liners.
2) In a large bowl, whisk together all of the dry ingredients. Make a well in the middle and add in the applesauce, butter, eggs, bananas, and vanilla. Stir until fully incorporated (don’t overmix!). Scoop evenly into prepared muffin pan.
3) Bake in preheated oven for 20-25 minutes of until toothpick inserted in the center comes out clean.
4) Remove cupcakes from pan and cool completely on cooling rack.
5) Frost!
Honey Cinnamon Cream Cheese Frosting
Ingredients:
1 cup butter, softened
8 oz cream cheese
2 tsp cinnamon
2 T honey
4-6 cups powdered sugar, sifted
2-4 T milk
Directions:
Cream together butter and cream cheese until fluffy. Add the honey and cinnamon, and gradually add the powdered sugar. Add the milk one tablespoon at a time until you reach the desired consistency.
Spread on the cooled cupcakes– ENJOY!
