Spritz!!

It’s the most wonderful time of the year!!

These little gems need little introduction. Spritz cookies are a Christmas classic. They’re bite-sized buttery cookies with the perfect amount of sweetness. Plus, they’re fun to make in all different shapes! My favorite, as you can see here, are the Christmas trees.

To make these with the shapes, you’ll need a spritz cookie press. If you don’t have one, no problem! Simply roll the dough into balls, flatten, and you have little ornament or snowball-esque buttery cookies.

Make these with your kids, family, friends…they’re fun to do. Someone can be doing the cookie press while others decorate the cookies before baking.

Let’s get to it 🙂

SPRITZ!
Makes about 6 dozen bite-sized cookies
Ingredients
1 cup unsalted butter, softened
1 cup powdered sugar, sifted
1 egg
1/2 tsp vanilla extract
1/2 tsp almond extract (or use all vanilla extract, if you don’t have or don’t want the almond flavor)
2 1/2 cups flour
1/2 tsp salt
Sprinkles for decorating, as desired

Directions
1) Preheat your oven to 350 degrees F.
2) In a mixing bowl with an electric mixer or stand mixer, beat together the butter and sugar on a medium-high speed. Keep the beaters going until the mixture is smooth and fluffy.
3) Add in the egg, vanilla extract, and almond extract. Beat again, this time on a medium speed, until the ingredients are fully incorporated. Use a rubber spatula to scrape down the sides of the bowl as needed.
4) With the mixer on the lowest speed, gradually add in the flour and salt. Keep mixing until the dough comes together. It’ll be soft and smooth, but not sticky.
5) Press the dough into the body of your cookie press. Attach the shape that you want to use.
6) Onto baking sheets, press each cookie! Hold the cookie press directly in the sheet, pull the trigger to dispense the dough all the way, and then pull the cookie press up. The cookies won’t spread during baking, so I do them as close together as the circular cookie press nozzle will allow.
7) Decorate your pre-baked cookies with color sprinkles! I used green for Christmas trees, and red for little dough balls that I will call ornaments. These are the pieces of dough that didn’t make perfect trees 🙂
8) Bake them in your preheated oven for about 9 minutes, or until the edges just start to turn light brown.
9) Cool the cookies for a couple of minutes on the baking sheet. Then, move them to a baking rack to cool completely.
10) As always, eat (at least) one warm!! It’ll melt in your mouth. The warm, sweet butteryness.
