Ok, I’m officially obsessed. Acai bowls are SO GOOD!! They’re smooth, creamy, so satisfying, and HEALTHY! It’s changing my life. Big statement? Absolutely.

I’m so excited to make all sorts of acai bowls. This one here tastes like CHOCOLATE! Which, as you probably know, is my favorite food. Not only that, but one bowl has 2 servings of fruit and a full serving of vegetables. Vegetables?! That’s right– there is spinach blended into the base. You can’t taste it at all!!!

This recipe makes 2 bowls.
Ingredients:
For the creamy base–
2 tablespoons unsweetened dark chocolate cocoa powder
6 oz bag spinach, steamed (poke a hole in the bag and microwave for 4 minutes)
2 packages frozen of acai puree (3.5 oz each = 7 oz total)
1 frozen banana
dash of cinnamon
1 packet stevia (optional)
For toppings–
handful of raspberries, chopped
2 figs, diced
2 dates, pits removed, diced
2 Tablespoons flaxseeds
1 tsp chia seeds
1 banana, sliced

Directions:
1) In a food processor, put all of the base ingredients, and turn it on high! All those ingredients will turn into a smooooooth dark deep purple-color mixture with a soft serve ice cream type consistency. When it’s all combined, split into two bowls.
2) Top each bowl with half of the topping ingredients.
3) Eat! That’s it!

You can feel good about eating this because, you know, it really is healthy! And not only is it choc-full of nutrition (fiber, the “good” fats, protein, fruits vegetables oh my!) but it also tastes like CHOCOLATE!!

What other food combinations do you all like? I’ll make more acai bowls soon (and by soon, I mean tomorrow).

Happy healthy eating!
