Mint Oreo Hot Chocolate Cookies!

I LOVE the holidays. The lights, jingles, colors, traditions, festivities, friends, and family.

To kick off my holiday baking, I decided to make something with mint. These aren’t strictly a Christmas cookie, but mint seems to be an appropriate flavor to use.

Hot chocolate mix is what makes these cookies chocolate, providing a flavor slightly different than straight cocoa powder. Add in chocolate chips and crushed up mint Oreos, and you’ve created these cookies!

They are soft & tasty! I brought most of them to work, and froze the rest to have whenever. Yummmm

Mint Oreo Hot Chocolate Cookies!

Ingredients:

3 1/4 cups flour
4oz hot chocolate mix
1 1/4 tsp baking soda
1 tsp salt
2 sticks unsalted butter, softened
1 cup granulated sugar
2/3 cup brown sugar, lightly packed
2 large eggs
1 tsp vanilla
2 cups semisweet chocolate chips
1 packages mint Oreo cookies, crushed

Directions:

1) Whisk together the flour, hot chocolate mix, baking soda, and salt. Set aside.
2) In a large bowl, beat together the butter and sugars until creamy. Add in the eggs and vanilla.
3) Slowly incorporate the dry ingredients, followed by the chocolate chips and the crushed mint Oreo cookies. Switch to a wooden spoon if the dough is too thick. (I’d recommend doing this– the dough reaches a point where it’s just easier with the wooden spoon.)
4) Cover the dough bowl with plastic wrap and refrigerate until chilled, at least an hour.
5) When ready to make the cookies, preheat the oven to 350 degrees F. Line baking sheets with parchment paper.
6) Using a cookie scoop (or two spoons), scoop the cookie dough on the baking sheets, leaving space with each cookie to spread slightly. I used a small cookie scoop.
7) Bake in preheated oven for 7-9 minutes, or until not longer “wet” looking.
8) Cool the cookies for a few minutes on the baking sheet, then transfer them to a wire cooling rack.
9) TRY THEM WARM! Then, store at room-temperature in an airtight container. The fresher they are, the better they taste!

  1. Hmmm…I’m interested to taste these made with hot cocoa mix!

    1. Let me know what you think! I love it! If you’re using hot chocolate mix packets, make sure to use 4 oz! (some packets are only .7 oz each, so you would need more than 4 packets to make up 4 oz. Conversely, some packets are 1.25 oz)
