Pumpkin Chocolate Chip Bars & Peanut Butter Oatmeal Chocolate Chip Bars!

Hello Friends!

It’s been too long! I’ve been baking and cooking per usual, just haven’t had as much time to post!

Recently, I made two different types of treats:

Peanut Butter Oatmeal Chocolate Chip Bars with Oreos and Pretzels
&
Whole Wheat Pumpkin Chocolate Chip Bars (no butter or oil!)

The peanut butter bars are exploding with flavor– peanut butter, chocolate, crunchy, salty, sweet..so good (on right, above)!! The pumpkin bars are ooey-gooey deliciousness (on left, above)! Added bonus that they’re decently healthy relative to other baked goods!!

Recipes below! Try ’em out!

Pumpkin Chocolate Chip Bars!

Ingredients:
3 1/2 cups whole wheat flour
2 tsp baking soda
1 teaspoon salt
1 Tablespoon cinnamon
1 tsp nutmeg
1 3/4 cups granulated sugar
1 15-oz can pumpkin puree
1 cup applesauce
2/3 cup water
4 eggs, lightly beaten
1-2 cups mini chocolate chips (I used both mini and regular this time!)

Directions:
1) Preheat oven to 375 degree F. Line a 12×17 inch jelly roll pan with foil. Spray with cooking spray.
2) In a medium-sized bowl, whisk together the flour through nutmeg. In a large bowl, mix together the sugar, pumpkin, applesauce, water, and eggs.
3) Slowly incorporate the dry ingredients into the wet ingredients in the large bowl. When most of the flour streaks are gone, mix in the chocolate chips, just until combined.
4) Pour batter into prepared pan. Bake in oven for 20-30 minutes or until set.
5) Enjoy warm & gooey, or cool & gooey!!! 🙂

Peanut Butter Oatmeal Chocolate Chip Bars with Oreos and Pretzels!

Ingredients:
1 stick butter, softened
2 cups peanut butter (I always use creamy, but you could use crunchy too!)
1 1/4 brown sugar
1 cup granulated sugar
1/2 tsp salt
2 tsp baking soda
3 eggs
1/2 tsp vanilla
4 1/2 cups oats (quick or old fashioned)
2 cups chocolate chips (1 12-oz bag)
~15 Oreos, crushed
1 cup pretzel pieces

Directions:
1) Preheat oven to 375 degree F. Line a 12×17 inch jelly roll pan with foil. Spray with cooking spray.
2) In a large bowl with a mixer on medium speed, beat together the butter, peanut butter, and sugars until fluffy. Add in the baking soda, salt, eggs and vanilla and beat until combined. Next, add the oats, and as much as will fit of the chocolate chips, Oreos, and pretzels. Mix well. Add in the rest of the mix-ins and stir with a wooden spoon until all combined.
3) Press dough into prepared pan. Bake 12-18 minutes, or until a nice golden brown, like below!

4) Cut into bars (while warm or cool)!
