Chocolate & Pretzels & Peanut Butter & Oreos & MORE!

Post-finals, I could not WAIT to get baking!

I wanted to make something unique, something sweet (of course), and something I could share with a lot of people!

So, I combined all of my favorite flavors:

1) Oatmeal Oreo Peanut Butter Cup Cookies!
oatmeal cookies with chunks of oreos & crushed up peanut butter cups. The perfect choco-peanut butter treat!

2) Triple Chocolate Pretzel Cookies!
soft, chewy cookies, made with semi-sweet chocolate chips, milk chocolate chips, dark chocolate chunks, and crushed up pretzels! Salty & Sweet = party in your mouth! A great combination of soft cookie with crunch of pretzel!

3) Whole Wheat Choco-Banana Bars!
100% whole wheat chocolate banana bars, made with no butter or oil, sprinkled with turbinado sugar & mini-chocolate chips.  High in fiber & low(er) in fat than a typical bar or cookie goodie– why not give ’em a try?!

Now, I didn’t just go on this baking spree to give myself a sugar-high; I made them to spread the love!

Lots of the cookies I brought to my last day of work at my internship– a great note to leave on 🙂 Some of the other cookies I brought to friends, and the rest of them I popped into the freezer for continual & future enjoyment! I made the choco-banana bars for my roommates! We all loove chocolate-banana goodies!!

SO who’s ready to bake?!

Oatmeal Oreo Peanut Butter Cup Cookies!

Ingredients:

2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 sticks butter, softened
1 cup granulated sugar
1 cup brown sugar
1 tsp vanilla
2 large eggs
2 1/2 cups oatmeal
15-20 crushed Oreos
2 cups chopped peanut butter cups
Directions:

1) Preheat oven to 375 degrees F. Line baking sheets with parchment paper.

2) Whisk the flour, salt, baking soda, and baking powder in a small bowl. Set aside.

3) Beat the butter and sugars in a large bowl until fluffy.  Add in the eggs & vanilla and beat until combined. Scrap down the sides of the bowl with a spatula if you need to.

4) Slowly add the flour mixture to the butter mixture. Once combined, add the oatmeal, Oreos, and peanut butter cups. Switch to stirring with a wooden spoon if the batter is too thick.

5) Scoop the cookie dough by teaspoon or tablespoon full onto the prepared baking sheets.  Bake in the oven for 8-10 minutes.  Cool for a 2-3 minutes on the baking sheet, then remove them to a cooling rack.

Enjoy warm or cooled!

Triple Chocolate Pretzel Cookies!

Ingredients:

2 1/2 cups flour
1 tsp baking soda
2 sticks butter
1 1/2 cups brown sugar
2 large eggs
1 tsp vanilla
1 cup semisweet chocolate chips
1 cup dark chocolate chunks
1 cup milk chocolate chips
1-2 cups crushed salted pretzels

Directions:

1) Preheat oven to 375 degrees F. Line baking sheets with parchment paper.

2) Whisk the flour and baking soda in a small bowl. Set aside.

3) Beat the butter and sugar in a large bowl until fluffy.  Add in the eggs & vanilla and beat until combined. Scrap down the sides of the bowl with a spatula if you need to.

4) Slowly add the flour mixture to the butter mixture. Once combined, add all of the chocolate chips and the pretzels. Switch to stirring with a wooden spoon if the batter is too thick.

5) Scoop the cookie dough by teaspoon or tablespoon full onto the prepared baking sheets.  Bake in the oven for 8-10 minutes.  Cool for a 2-3 minutes on the baking sheet, then remove them to a cooling rack.

The chocolate-pretzel flavor explodes in your mouth! yummmmuyyy!

Whole Wheat Choco-Banana Bars!

Ingredients:

1 3/4 cup whole wheat flour
3/4 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 cup unsweetened applesauce
3 ripe bananas, mashed
2 eggs
1 tsp vanilla
10oz bag mini chocolate chips (divided)

Directions:

1) Preheat oven to 350 degrees F. Grease a 13×9 inch baking pan.

2) In a small bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Set aside.

3) In a large bowl, combine the applesauce, mashed bananas, eggs, and vanilla.  Add the flour mixture and gently stir.  Fold in 1/2 – 3/4 of the chocolate chips.

4) Spread into prepared pan. Sprinkle the top with the rest of the chocolate chips.  Bake for 30-40 minutes, or until a toothpick inserted in the middle comes out clean.  Remove from the oven and allow to cool completely (or try a piece warm!! SO good!)
