Hot Chocolate YORK Mint Cookies!

Ever buy one of those cans of hot chocolate, but realize you’ll never finish it? Or how about when you have two friends that give you variety packs of hot chocolate as part of a holiday gift? Well, I had both, and consequently a lot of hot chocolate mix! Don’t get me wrong, as a chocoholic, I love hot chocolate, but I figured I could spare some for these cookies!  They were an experiment, and if I do say so, an AWESOME success!!

The President (..of my sorority) declared these the best cookies she’s ever had.  Of course everyone has different taste buds, but I’d say that’s a good sign!

Oh and I made these as a finals treat for my sorority, much like many other things I’ve been posting lately.  Who doesn’t love a study sweet? Cookie break? Late-night treat?

Whatever you call it, have a cookie!

Hot Chocolate YORK Mint Cookies!

Ingredients:
1 cup unsalted butter (softened)
1 cup granulated sugar
2/3 cup brown sugar
2 large eggs
1 tsp vanilla
3 1/4 cups flour
4 1-oz packages of hot chocolate mix (or 1/2 cup if your measuring out from a can!)
1 tsp salt
1 1/4 tsp baking soda
Two packages of YORK Pieces (like, Reese’s pieces, but Yorks!)

Directions:
Whisk together the flour, salt, baking soda, and hot chocolate mix. Set aside.

Cream together the butter and sugars until fluffy and well combined.  Add in vanilla and eggs, and beat well.  Gradually add in the flour mixture just until combined. Stir in the York pieces.

Cover with Press ‘n’ Seal (or foil, plastic wrap, etc) and put in the fridge for at least an hour. (I know, I hate having to refrigerate dough too, but you really have to for this recipe to work, AND it’s worth it. Maybe save out some of the York pieces to munch while you wait? ;))

Preheat oven to 350 degrees F. Take the dough out of the fridge after an hour (or longer) and scoop onto a parchment lined baking sheet (parchment isn’t really necessary, but I find the cookies cook better, nothing ever gets stuck on the pan, and it makes for easy clean up)!  Bake in preheated oven for about 9 minutes, or until the edges just start to brown.  Remove from oven.  Let them cool on the sheet for a couple minutes, and then remove them to a cooling rack to cool completely.  Try one warm!
