I am a chocolate-peanut-butter addict. Truth, I admit it. My brothers and sister happen to really like chocolate and peanut butter too…perhaps it’s genetic. Anyway, My younger brother was turning 16 when I made these (2 years ago…I’m writing catch-up posts, remember! :)). I was in college, so I made these, packaged them up (and covered to other label with my crafty paper, of course), and voila! Shipped it home to him in time for the big day!
There’s a secret to these…it’s in the chocolate…
You’ll need a glass of milk with these!
Peanut Butter Cups!
1 cup creamy peanut butter (you’ll need this 1/2 a cup at a time. I also am pretty generous when portioning my “1/2 cups”…
2 T butter
1/2 cup powdered sugar
1/2 tsp salt
3 cups GOOD QUALITY chocolate (I used semi-sweet, but next time may use milk chocolate and/or dark)
Line 3 dozen mini muffin cups with mini muffin cup liners (foil is best).
in a small, microwave-safe bowl, put 1/2 cup peanut butter and the butter. Put in the microwave for about 30 seconds, so that it is softer and easier to stir. Stir in the powdered sugar (sifted) and salt until smooth.
Melt the chocolate, either in a double boiler (place large metal bowl over a pot of simmering water), or gradually in the microwave. I usually just microwave. If you’re using the microwave method, heat in 30 second intervals, stir after each time (should take 2-3 minutes) Make sure not to overheat the chocolate! Stir in the other 1/2 cup peanut butter into the chocolate (it will melt in as you stir). This is the secret to super chocolaty-peanut butter goodness!
Dollop a little chocolate into the bottom of each muffin cup. Use a spoon to spread it around and slightly up the sides of the muffin cup. Then place a small dollop of peanut butter on top of each chocolate dollop. Top with more chocolate, covering the peanut butter. Place in the refrigerator until set, a few hours at least is best. Store in the fridge or at room temperature.
