It’s a new week, you want to eat right, exercise, and, well, get to Friday!
Enjoy these low-fat, whole wheat, ~150 calorie muffins as a quick breakfast, snack, or even dessert!
The muffins above were made with yogurt, and the muffins below were made with applesauce
I made the ones with applesauce a few weeks ago and they were delicious! Moist, delicate, chocolaty, and banana-y! When I was making them again yesterday, I realized I didn’t have any applesauce! So, I used a 5.3oz container of plain fat-free greek yogurt. The ones with yogurt are equally as chocolaty & banana-y, just a little bit chewier in texture. I think I prefer the muffins with applesauce– just makes a slightly better texture. Either way though, I definitely recommend!
And at only ~150-160 calories per muffin and less than 2 grams of fat, you can indulge without feeling guilty!
I usually spread it with PB2- a low-fat version of peanut butter
I found it in Whole Foods. You can also buy it online from amazon here! There is a regular peanut butter version and a chocolate peanut butter version. Both SO GOOD and only 45 calories per serving!
Try ’em for yourself!
*Healthy* Chocolate Banana Muffins
1 1/2 cups whole wheat flour
1/2 cup cocoa powder (I used Hershey’s Special Dark Unsweetened Cocoa)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3/4 cup sugar
2 eggs, slightly beaten
3 mashed bananas
1/2 cup unsweetened applesauce or 1/2-3/4 cup nonfat plain greek yogurt
1 tsp vanilla extract
1) Heat oven to 35o degrees F. Line a 12-indent muffin pan with foil baking liners.
2) Whisk together all of the dry ingredients. Add in all of the wet ingredients and fold in gently and lightly.
3) scoop evenly into muffin pan. Bake in preheated oven for 12-15 minutes or until a toothpick inserted in the center comes out clean.
4) Cool in pan for 5-10 minutes, then remove to a cooling rack.
Note: These freeze well too! Then you can just take one out whenever you want to!
Have a wonderful week!
